
Butterfly Blue Pea Paneer Delight

A vibrant, protein-rich dish infused with the earthy notes of blue pea flowers and the spice of black pepper. Perfect as a side or a light main course!
Ingredients:
• 200g paneer (cubed)
• 1 tbsp blue pea flowers (dried) or 2 tbsp brewed blue pea tea
• 1 cup cooked rice
• 1 tbsp oil (olive or ghee)
• 1 tsp black pepper (freshly ground)
• ½ tsp cumin seeds
• 1 small onion (sliced)
• 1 small capsicum (sliced)
• 2 garlic cloves (minced)
• 1 green chili (slit, optional)
• Salt to taste
• ½ tsp soy sauce (optional, for umami)
• Fresh coriander leaves for garnish
Instructions:
1. Prepare Blue Pea Infusion: If using dried blue pea flowers, steep them in ¼ cup hot water for 5 minutes. Strain and set aside.
o If using brewed blue pea tea, keep it ready.
2. Saute Aromatics:
o Heat oil in a pan, add cumin seeds, and let them splutter.
o Add garlic, onion, and green chili. Sauté until onions turn translucent.
3. Cook Paneer:
o Add paneer cubes and capsicum. Stir-fry for 2–3 minutes on medium heat.
o Pour in the blue pea infusion and mix well, letting the color coat the paneer evenly.
4. Add Rice and Seasoning:
o Add cooked rice to the pan and toss gently to mix everything.
o Add black pepper, salt, and soy sauce (if using). Stir well and cook for another 2 minutes.
Serving Suggestions:
• Enjoy as a side with roti or rice.
• Serve as an appetizer with a squeeze of lemon.
